In combat areas, where kitchens cannot be set up, soldiers must look to MRE’s or meals ready-to-eat for their daily sustenance. These are not usually the most tasty types of foods and one of the most requested MRE inventions has been pizza. Pizza presents researchers with a difficult task because they need to make a recipe that does not require refrigeration or freezing. Fortunately, researchers in Massachusetts say they are close to discovering a recipe that will prevent pizza from becoming soggy, decreasing the chance of the development of a breeding ground for various types of disease-causing bacteria and mold. In order to accomplish this scientists had to use ingredients such as humectants, which bind to the water and prevent it from getting to the dough, and alter the acidity of the sauce, cheese, and dough to make it harder for oxygen and bacteria to grow. Hopefully scientists close in on perfecting this recipe so soldiers can be provided with food that they actually enjoy eating.
